做(zuò )法:春笋切成片后加少许盐(yán )捞出后用清水(shuǐ )浸泡,生姜(jiāng )切片,葱切成段。锅烧(shāo )热(rè ),倒(dǎo )入2勺油,放(fàng )入生姜、春(chūn )笋、牛肉(ròu )片、葱段翻(fān )炒1分钟左右。再(zài )加入生抽、老抽、蚝油翻(fān )炒均匀(yún ),加入少量清水半(bàn )掩住春笋,盖上锅盖大火煮(zhǔ )开后转(zhuǎn )中火。煮到(dào )水快熬干的时候加(jiā )入盐,翻炒均匀稍收汁时盖上锅盖焖。
