做法:春笋(sǔn )切成(chéng )片后加少(shǎo )许(xǔ )盐捞出后用清水(shuǐ )浸泡,生姜切(qiē )片(piàn ),葱切成段。锅烧热,倒入(rù )2勺油,放入生(shēng )姜、春笋、牛(niú )肉片、葱段翻炒1分钟(zhōng )左右。再加入生抽、老抽、蚝油翻炒均匀,加入少量清水(shuǐ )半(bàn )掩住春笋,盖上锅盖大火煮开后转中火。煮到水快熬干的(de )时候(hòu )加入(rù )盐,翻炒均匀稍收(shōu )汁时盖上锅盖(gài )焖(mèn )。
