做法:春笋切成片后加少许盐捞出后用清(qīng )水浸(jìn )泡,生姜切片,葱(cōng )切成段。锅烧热(rè ),倒(dǎo )入2勺油,放入(rù )生姜、春笋、牛肉片、葱段翻炒1分钟(zhōng )左右。再加入生抽、老抽(chōu )、蚝油(yóu )翻炒均(jun1 )匀(yún ),加入(rù )少量(liàng )清水半掩住(zhù )春笋,盖上锅(guō )盖大火煮开(kāi )后转中火。煮到水快熬干的时候加入盐,翻(fān )炒均匀稍收汁时盖上锅盖焖(mèn )。
