做法:春笋切成片后加少(shǎo )许盐捞出后用清水浸泡,生姜切片,葱切成段。锅(guō )烧热,倒入2勺(sháo )油,放入生姜、春笋、牛(niú )肉片(piàn )、葱段翻(fān )炒1分钟左右。再(zài )加入生(shēng )抽、老抽(chōu )、蚝油翻炒(chǎo )均匀,加入少(shǎo )量(liàng )清水半掩住春笋,盖(gài )上锅盖大火煮开后转中火。煮(zhǔ )到水快熬干的时候加入盐,翻炒(chǎo )均匀(yún )稍收汁时盖(gài )上锅盖焖。
