做法:洗(xǐ )净宰好鲫鱼,洗净淮山和薏(yì )米。用清水把陈皮泡(pào )软,拍裂一(yī )小块姜,热锅,用姜(jiāng )块在(zài )锅上(shàng )擦(cā )一遍,放两勺油,待油六成(chéng )热下鱼,煎至微黄。煮沸瓦煲里的清水,放入煎煮好(hǎo )的(de )鲫鱼和其(qí )他材料(liào ),武火煮沸,转(zhuǎn )中小火(huǒ )煲一个半(bàn )小时,下盐调味即可品尝。
