做法:春笋切成片后加(jiā )少许盐捞出(chū )后用清水(shuǐ )浸泡,生姜切片(piàn ),葱切成(chéng )段。锅烧热(rè ),倒入2勺油,放入生姜、春笋(sǔn )、牛肉片、葱段翻炒1分钟(zhōng )左右。再加入生(shēng )抽、老抽、蚝油翻炒均匀,加入少(shǎo )量清(qīng )水半掩住春(chūn )笋,盖上(shàng )锅盖大(dà )火(huǒ )煮开后转中(zhōng )火。煮(zhǔ )到水快熬干的(de )时候加入盐,翻炒均匀稍收(shōu )汁时盖上锅盖焖。
