做法:春笋切(qiē )成片后(hòu )加少许(xǔ )盐捞出后用清水浸泡(pào ),生姜切片,葱切成段。锅烧热,倒入2勺油,放入生姜、春(chūn )笋、牛(niú )肉片、葱段翻炒1分钟左(zuǒ )右。再加入生抽、老(lǎo )抽、蚝油翻炒均匀,加入少量(liàng )清(qīng )水半(bàn )掩(yǎn )住春(chūn )笋,盖上(shàng )锅(guō )盖(gài )大火煮开后转中火。煮到水快熬干(gàn )的时候加入盐,翻炒(chǎo )均匀稍收汁时盖(gài )上锅盖焖。
