做法:春(chūn )笋切成片后加(jiā )少许盐(yán )捞出后用清水浸泡(pào ),生姜切片,葱切成段。锅烧(shāo )热,倒(dǎo )入2勺(sháo )油,放入生姜、春笋、牛(niú )肉片、葱段翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒(chǎo )均匀,加入(rù )少量清(qīng )水半(bàn )掩(yǎn )住春(chūn )笋,盖上锅盖大火煮开后转中火。煮(zhǔ )到水快熬(áo )干(gàn )的时候加入盐,翻炒均匀(yún )稍收汁时盖(gài )上锅(guō )盖焖。
