做法:洗净宰好鲫(jì )鱼,洗净(jìng )淮(huái )山和薏米。用清(qīng )水把陈皮泡(pào )软(ruǎn ),拍裂一小块姜,热锅,用姜块在(zài )锅上擦(cā )一(yī )遍,放两勺(sháo )油,待油六成热下鱼,煎至微黄。煮(zhǔ )沸瓦煲里的清水(shuǐ ),放入煎煮(zhǔ )好(hǎo )的鲫鱼和其他材料,武火煮(zhǔ )沸,转中小火煲(bāo )一个半小时,下盐调味即可品(pǐn )尝。 -
