做法:春笋切成片后(hòu )加少许盐捞出后用(yòng )清水浸泡,生姜切片(piàn ),葱切成段。锅烧热,倒入2勺(sháo )油,放入(rù )生姜、春笋、牛(niú )肉片、葱段翻炒1分钟左右。再加入生抽、老抽、蚝油翻(fān )炒均(jun1 )匀,加入(rù )少量清水半掩住春笋,盖上锅盖(gài )大火煮开后转中火。煮到水快熬干(gàn )的时候(hòu )加入(rù )盐,翻炒均匀稍(shāo )收汁(zhī )时(shí )盖上(shàng )锅盖焖。
